Ingredients

  • 500-625 g (1-1¼ lb.) cooked lobster meat
  • To taste, plain or basil mayonnaise (see recipe below)
  • 8 slices of Compliments Traditional Belgian Bread
  • To taste, melted butter
  • 8 slices of tomato
  • To taste, freshly ground black pepper
  • 8 thin slices of bacon or pancetta, cooked
  • To taste, lettuce or arugula
  • 250 mL (1 cup) mayonnaise
  • 250 mL (1 cup) minced fresh basil
  • 10 mL (2 tsp.) Dijon mustard
  • To taste, finely grated lemon zest
  • 45 mL (3 tbsp.) finely chopped green onion or chives (optional)

Instructions

  • Combine all ingredients in a bowl. Refrigerate.
  • In a large bowl, combine lobster meat and a sufficient amount of the mayonnaise selected.
  • Brush bread slices with melted butter and toast under the broiler, watching for desired doneness.
  • Divide lobster meat onto 4 slices of bread, add tomato slices, and season with pepper.
  • Cover with bacon or pancetta and top with lettuce.
  • Close sandwiches with 4 remaining slices of bread.
