Ingredients

  • 1 tbsp grapeseed oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 sweet potato, peeled and cubed
  • 2 tbsp red curry paste
  • 1 cup tomatoes, diced
  • 1 can (400ml) coconut milk
  • 1/3 carton CAMPBELL’S® Ready to Use Chicken Broth
  • 1/2 cup fresh cilantro, chopped

Instructions

  • In a large saucepan, heat oil over medium high heat.
  • Add in the onion, garlic cloves, salt and pepper.
  • Cook for 3 minutes.
  • Add in the sweet potatoes and curry paste.
  • Stir to coat with oil.
  • Then add in the tomatoes, coconut milk, and Campbell’s® Ready To Use Chicken Broth.
  • Let simmer for 15-20 minutes.
  • Stir in cilantro and then remove from heat.
  • Serve in bowls, over rice if you’d like.
  • Sprinkle additional with fresh cilantro and season with salt and pepper, to taste.
