Onion and Chive Potato Galettes

Ingredients

  • 5 potatoes
  • 30 ml (2 tbsp.) Compliments olive oil
  • 1 onion
  • 60 ml (¼ cup) minced chives
  • 45 ml (3 tbsp.) chopped fresh parsley
  • 5 ml (1 tsp.) dried thyme
  • To taste, salt and pepper

Instructions

  • Boil potatoes until cooked, but still slightly firm.
  • Allow to cool, then grate.
  • Heat oil in a large, heavy-bottom skillet.
  • Line skillet with potatoes to form a single layer.
  • Sprinkle with onion and chives and season to taste.
  • Cook over medium heat, pressing down on galette with a spatula.
  • When bottom is browned, divide into four pieces and gently turn over each piece with spatula.
  • Cook until other side is golden brown and slightly crisp.
  • Serve galettes hot, garnished with chives.
