Ingredients

  • 1 lb. (450 g) frozen gnocchi , uncooked
  • 1/2 cup Philadelphia Cream Cheese Product
  • 3 Tbsp. Classico Basil Pesto di Genova
  • 1 cup milk
  • 2 Tbsp. olive oil
  • 1 small onion , finely chopped
  • 1 cup finely chopped fresh mushroom s
  • 1/4 cup Cracker Barrel Finely Shredded 100% Parmesan Cheese
  • 1/2 cup quartered cherry tomatoes

4 servings, 1 cup (250 mL) each

Instructions

  • 1. Cook gnocchi as directed on package, omitting salt.
  • 2. Meanwhile, mix cream cheese and pesto in medium bowl until blended. Gradually stir in milk. Heat oil in large skillet on medium heat. Add onions and mushrooms; cook and stir 3 min. or until onions are softened. Add cream cheese mixture; mix well.
  • 3. Drain gnocchi. Add to cream cheese sauce in skillet; stir gently to evenly coat gnocchi. Cook 2 to 3 min. or until heated through, stirring constantly. Serve topped with Parmesan and tomatoes.
