1 tablespoon green onions, chopped (chives would work too)

Place potatoes in a large pot and cover with water. Place the pot over high-heat and bring to a boil. Once boiling, turn heat to medium and let the potatoes gently boil for about 20-25 minutes or until they easily fall apart when poked with a fork. Drain potatoes.
Add the drained potatoes to a bowl. Either using stand-alone mixer fitted with a whisk attachment or a hand-held mixer, whisk the potatoes for 1 minute. Add the rest of the ingredients and mix again until smooth and creamy. You may need to add more cream depending on how smooth you like your potatoes.
