Ingredients

  • 15 ml (1 tbsp.) olive oil
  • 1 bag (250 g) chopped leeks
  • 2 cloves garlic, minced
  • 1 can (796 mL) diced tomatoes with Italian seasoning
  • 1 container (900 mL) chicken broth
  • A pinch ground hot pepper flakes
  • 5 mL (1 tsp.) sugar
  • To taste, salt
  • To taste, pepper
  • 1 pack (400 g) frozen sole fillets, thawed
  • Multigrain (CA Bags) Bread
  • Swiss Chaliberg Lactose Free Cheese

Instructions

  • In a large pot set over medium-high heat, heat oil and brown leek and garlic for approximately 2 minutes.
  • Add remaining ingredients except sole fillets.
  • Bring to a boil and let simmer for 12 to 15 minutes.
  • Add fish fillets and continue cooking for approximately 4 minutes or until flesh becomes opaque.
  • Divide into four bowls and serve with lactose-free Swiss cheese and loaf bread.
