Thai Turkey Burgers with Red Curry Mayo

Ingredients

  • 1/3 cup (75 mL) fat-free mayonnaise
  • 2 tsp (10 mL) Thai red curry paste
  • Finely grated peel of 1 lime
  • 1 tbsp (15 mL) lime juice
  • 1 tsp (5 mL) honey
  • 1 lb (500 g) ground turkey
  • 1/2 cup (125 mL) finely chopped dry-roasted peanuts
  • 1/3 cup (75 mL) chopped fresh cilantro
  • 3 tbsp (45 mL) chopped fresh mint
  • 2 tsp (10 mL) Thai red curry paste
  • Finely grated peel of 1 lime
  • 1 tbsp (15 mL) lime juice
  • 1/2 tsp (2 mL) salt
  • 1/4 tsp (1 mL) pepper
  • 4 hamburger buns, split
  • 4 leaves lettuce

Instructions

  • In small bowl, stir all Red Curry Mayo ingredients with whisk.
  • Cover; refrigerate until serving time.
  • Heat gas or charcoal grill.
  • In large bowl, mix all burger ingredients except buns and lettuce.
  • Shape mixture into 4 patties, 1/2 inch thick.
  • Carefully brush oil on grill rack.
  • Place patties on grill over medium heat.
  • Cover grill; cook 9 to 12 minutes, turning once, until meat thermometer inserted in centre of patties reads 165ºF.
  • Place burgers on bottom halves of buns.
  • Spread tops of burgers evenly with Red Curry Mayo.
  • Top with lettuce.
  • Cover with top halves of buns.
