Ingredients

  • 2 large red peppers
  • 75 mL (1/3 cup) pine nuts
  • 2 mL (1/2 tsp.) each of paprika, saffron, and ground Cayenne pepper
  • 1 garlic clove
  • 30 mL (2 tbsp.) olive oil
  • 30 mL (2 tbsp.) lemon juice
  • 30 mL (2 tbsp.) fresh parsley

Instructions

  • Preheat the oven to 450°F (230°C).
  • Place whole peppers on the middle rack of the oven for 30 minutes or until charred.
  • Peel and seed peppers.
  • Mix peeled peppers with all the other ingredients in a food processor until smooth.
  • Refrigerate until ready to serve.
