Ingredients

  • 1 tbsp. (15 ml) vegetable oil
  • 2 cups (500 ml) sweet potatoes, peeled and coarsely chopped
  • ½ cup (125 ml) white onion, diced
  • 2 cups (500 ml) Natrel Lactose Free 3.25%
  • 2 cups (500 ml) Natrel Lactose Free 2%
  • ¼ cup (60 ml) parsley, chopped
  • 1¼ cups (310 ml) canned lentils, drained and rinsed
  • Salt and freshly ground pepper

Instructions

  • Heat the oil in a large pot. Add the sweet potatoes and cook for 4 to 5 minutes.
  • Add the onions and cook for 1 minute.
  • Add the Natrel Lactose Free 3.25% and Natrel Lactose Free 2%, and simmer for 15 minutes, stirring occasionally, or until sweet potatoes are tender.
  • Transfer the soup to a blender and purée until smooth.
  • Pour the soup back into the pot and bring to a simmer.
  • Add the parsley and lentils. Season with salt and pepper, and serve.
