Ingredients

  • ¼ cup (60 ml) mild sweet chilli sauce
  • 1 tbsp. (15 ml) chopped fresh ginger
  • 2 garlic cloves,
  • 1 tbsp. (15 ml) sugar or honey
  • 3 tbsp. (45 ml) fish sauce
  • ¼ cup (60 ml) coarsely chopped roasted cashews
  • ¼ cup (60 ml) coarsely chopped fresh cilantro
  • 2 extra-firm mangos,
  • 2 tbsp. (30 ml) rice vinegar
  • 8 Sensations by Compliments Cooked, Colossal Black Tiger Shrimp (13-15 ct), thawed and patted dry with paper towel
  • 60 ml (1/4 cup) green onions

Instructions

  • In a bowl, combine mangoes, cilantro, cashews, fish sauce and sugar or honey.
  • Set aside.
  • In a skillet, combine garlic, ginger, chilli sauce and vinegar and bring to a boil over medium-high heat.
  • Cook until sauce is reduced by half, about 5 to 10 min.
  • Add shrimp, sesame seeds and green onions to skillet and heat for 2 to 3 min., stirring to coat shrimp.
  • To serve, spoon mango salad onto platter and top with shrimp.
