Ingredients

  • 4 mixed red, yellow and green peppers, cut lengthwise in half, seeded
  • 1/4 cup loosely packed fresh parsley, chopped, divided
  • 2 cups shredded rotisserie chicken
  • 2 cups cooked quinoa
  • 1 cup halved cherry tomatoes
  • 1/2 cup frozen peas
  • 1/2 cup Kraft Extra Virgin Olive Oil Greek Feta Dressing
  • 1/4 cup Heinz [Seriously] Good Mayonnaise
  • 1 tsp. ground turmeric
  • 1/2 cup Cracker Barrel Crumbled Feta Cheese

Instructions

  • 1. Place pepper halves, cut sides up, in 13x9-inch baking dish sprayed with cooking spray; cover.
  • 2. Bake 20 min. Meanwhile, combine half the parsley with all remaining ingredients except cheese.
  • 3. Spoon chicken mixture into pepper halves.
  • 4. Bake, uncovered, 8 to 10 min. or until chicken filling is heated through.
  • 5. Sprinkle with cheese and remaining parsley.
