Ingredients

  • 125 mL (½ cup) drained and chopped oil-packed sundried tomatoes
  • 30 mL (2 tbsp.) very finely chopped shallots
  • 30 mL (2 tbsp.) tomato pesto
  • 8 fresh basil leaves, chopped
  • 18 Breton Bites crackers, original flavour
  • 1can (85 g) smoked mussels
  • To taste, arugula microgreens

Instructions

  • Mix together the sundried tomatoes, shallots, pesto, and basil in a bowl.
  • Spoon about 5 mL (1 tsp.) of the tomato-basil mixture onto each cracker, add a mussel on top, and garnish with microgreens.
