Ingredients

  • 180 mL (¾ cup) pearl barley
  • 2 L (8 cups) fish stock
  • 250 mL (1 cup) potatoes, diced
  • 250 mL (1 cup) red bell pepper, diced
  • 250 mL (1 cup) snow peas, diagonally sliced
  • 125 mL (½ cup) leeks, thinly sliced
  • 10 mL (2 tsp.) salted herbs
  • 750 g (1½ lb.) your choice of seafood (Northern shrimp, fresh mussels, fresh clams, fresh scallops size 20/30)
  • garnish, fresh chives chopped
  • To taste, pepper

Instructions

  • Bring fish stock to a boil in a saucepan.
  • Add barley, vegetables and salted herbs.
  • Let simmer over low heat for 30 minutes.
  • Add seafood 10 minutes before end of cooking.
  • Pepper to taste.
  • When ready to serve, garnish with fresh chives.
