Ingredients

  • 1 carton CAMPBELL’S® Ready to Use Chicken Broth
  • 16 oz dried pasta like fusilli or penne
  • 1/2 cup mayonnaise
  • 3 tbsp lemon juice
  • 1/4 cup chopped fresh herbs(basil, dill, chives, oregano, cilantro)
  • 4 cups chopped romaine lettuce
  • 8 slices cooked bacon, chopped
  • 2 cups shredded cooked chicken
  • 2 cups cherry tomatoes, halved
  • 1/2 cup crumbled blue cheese (optional)
  • 2 each medium avocado, pitted, peeled and chopped
  • 4 each hard-boiled egg, peeled and chopped

Instructions

  • In a large pot, bring chicken broth and pasta to a boil.
  • Reduce heat and simmer until pasta is al dente and most of the liquid has been absorbed, about 10 minutes.
  • Set the cooked pasta aside
  • In a large bowl, stir together mayonnaise, lemon juice, herb, salt and fresh cracked pepper.
  • Stir in cooked pasta. Let cool completely.
  • Spread lettuce on a large serving platter.
  • Top with pasta mixture.
  • Arrange layers of lettuce, bacon, chicken, tomatoes, cheese, avocado and eggs on top of one another.
  • Serve cold.
