Ingredients

  • 1 bag (650 g) McCain® Spicy Lattice Cut Fries
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1 1/2 cups pulled pork
  • 1 onion, chopped and sautéed
  • 1/3 cup mayonnaise
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 2 cloves garlic, minced
  • 1/4 tsp each salt and pepper
  • 3/4 cup prepared coleslaw mix
  • 1 plum tomato, seeded and chopped
  • 2 green onions, finely sliced

Instructions

  • Preheat oven to 450?F (230?C). Bake McCain® Spicy Lattice Cut Fries according to package directions.
  • Pile McCain® Spicy Lattice Cut Fries on pizza pan to resemble nachos; layer cheese, pulled pork and onion over top. Return to oven just until cheese starts to melt.
  • Meanwhile, stir together mayonnaise, olive oil, lemon juice, mustard, garlic, salt and pepper.
  • Top nachos with coleslaw, tomato, green onions and garlic mayonnaise.
