Ingredients

  • 4 large tomatoes, halved and cored
  • To taste, pepper
  • 30 ml (2 tbsp.) bread crumbs
  • 30 g (1 oz) freshly grated parmesan cheese (approx. 60ml / 1/4 cup)
  • 5 ml (1 tsp.) sugar
  • 60 ml (1/4 cup) Pesto
  • 30 ml (2 tbsp.) olive oil

Instructions

  • Preheat oven broiler.
  • Carefully remove the tomato seeds with a small spoon without tearing the flesh.
  • In an oven-safe pan, warm olive oil over medium-high heat.
  • Place tomatoes in pan flesh side down.
  • Cook 5 minutes without disturbing.
  • Turn and cook 5 minutes on opposite side.
  • Remove from heat.
  • Brush tomatoes with pesto.
  • Add equal parts sugar, parmesan, and bread crumbs.
  • Season with pepper to taste.
  • Grill for 5 minutes or until tops are golden brown.
  • Serve immediately with IGA brochettes and linguine.
