Mushroom & Spinach Stir-Fry Recipe
1 pouch UNCLE BEN’S® READY RICE® Whole Grain Brown
2 tablespoons oil
3/4 pound chicken breast, cut into bite-size pieces
4 ounces sliced fresh mushrooms
1 box (10 ounces) frozen spinach, thawed and drained
2 tablespoons lite soy sauce

Heat rice in microwave for 90 seconds.
In a skillet, heat oil over medium-high. Sauté chicken for 5 minutes or until completely cooked.
Add mushrooms and spinach to the skillet; cook 2 minutes. Stir in soy sauce and serve over rice.
