Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 1 Tbsp. Magic Baking Powder
  • 1 tsp. baking soda
  • 2 cups chopped cooked broccoli
  • 1 cup Cracker Barrel Shredded Double Cheddar Cheese
  • 1/4 cup plus 2 Tbsp. oil , divided
  • 3 eggs
  • 1 cup 1% buttermilk

Instructions

  • 1. Place 10-inch ovenproof or cast iron skillet in oven.
  • 2. Combine first 4 ingredients in large bowl. Stir in broccoli and cheese.
  • 3. Reserve 2 Tbsp. oil. Whisk remaining oil with eggs and buttermilk until blended. Add to cornmeal mixture; stir just until moistened.
  • 4. Remove hot skillet from oven. Add reserved oil; tilt skillet to evenly coat bottom with oil. Add prepared batter.
  • 5. Bake 20 to 25 min. or until toothpick inserted in centre comes out clean. Cool slightly.
