Ingredients

  • 1 tbs olive oil
  • 300 g bacon rashers diced
  • 3 garlic clove *to taste
  • 1/4 cabbage thinly sliced
  • 3 carrot diced
  • 4 celery stick diced
  • 1/4 cup basil finely chopped
  • 2 tbs vegetable stock (liquid)
  • 400 g canned cannellini beans
  • 800 g canned chopped tomato
  • 140 g tomato paste
  • 1 cup pasta
  • 5 cup water *to taste
  • 1 onion diced

Instructions

  • Heat oil in a large stockpot then add bacon, onion and garlic.
  • Sauté until partially cooked, then add carrot and celery and cook for 4-5 minutes until carrots are starting to soften.
  • Add cabbage and cook until it starts to soften and reduce in size.
  • Add water, tomato paste, tinned tomatoes, basil and vegetable stock, stir well and bring to the boil slowly.
  • Once boiling, add pasta and stir occasionally.
  • Boil for 6-8 minutes, until pasta is almost cooked, then add beans and continue to stir occasionally until pasta is soft.
  • Serve with fresh bread.
