Ingredients

  • 2 acorn squash (2 lb./900 g)
  • 1 Tbsp. butter
  • 1 small onion , chopped
  • 1/4 cup dried cranberries
  • 1 Tbsp. chopped fresh rosemary
  • 1 can (14 fl oz/398 mL) Heinz Maple Style Beans with Pure Quebec Maple Syrup
  • 1/2 tsp. orange zest

Instructions

  • 1. Cut squash lengthwise in half; scrape out and discard seeds. Place squash on microwaveable plate. Microwave on HIGH 5 min.
  • 2. Meanwhile, melt butter in medium nonstick skillet on medium heat. Add onions; cook 3 min. or until softened, stirring frequently. Add cranberries and rosemary; mix well. Cook and stir 2 min. Remove from heat; stir in beans and orange zest.
  • 3. Spoon bean mixture into squash shells; place, filled sides up, on rimmed baking sheet.
  • 4. Bake 25 min. or until filling is heated through and squash is tender.
