Make-Ahead Spiced Pork & Apple Roast

Ingredients

  • 1 Tbsp. brown sugar
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. garlic powder
  • 1 pork tenderloin (1 lb./450 g)
  • 2 Granny Smith apple s, peeled, cut into 1/2-inch-thick slices
  • 1/4 cup plus 2 Tbsp. Kraft Extra Virgin Olive Oil Fig Balsamic Dressing , divided
  • 4 cups cubed peeled butternut squash (1 inch)

Makes 4 servings, 1/4 recipe (190 g) each.

Instructions

  • Mix first 3 ingredients; press evenly onto surface of meat.
  • Place in freezer-weight resealable plastic bag.
  • Add apples and 1/4 cup dressing; seal bag.
  • Freeze up to 3 months.
  • Refrigerate overnight to thaw.
  • Heat oven to 400ºF.
  • Place squash on rimmed baking sheet sprayed with cooking spray; drizzle with remaining dressing.
  • Bake 20 min.; turn squash.
  • Remove meat and apples from bag; add to baking sheet with squash.
  • Bake 20 to 25 min. or until meat is done (160ºF) and squash is tender.
  • Discard bag and marinade.
  • Slice meat.
  • Serve with apples and squash.
