Ingredients

  • 120 g whole-wheat pennes
  • 6 Anchovy
  • 160 g aragula lettuce
  • 30 g Parmesan cheese
  • 1 balsamic vinegar
  • 2 garlic clove
  • 30 mL (2 tablespoon) Olive oil
  • 1 pinch Pepper

Instructions

  • Cook the pasta al dente in a large volume of lightly salted boiling water.
  • Peel the garlic and chop it finely. Brown them in a frying-pan with some olive oil.
  • Separate the anchovies and soften them with the garlic. Add pepper.
  • Pour one tablespoon of cooking water from the pasta on the anchovy. Mix.
  • Drain the pasta and toss them in the frying-pan. Mix at very low heat. Add the parmesan and mix for a few seconds. Correct the seasoning with some pepper if needed.
  • Wash and drain the aragula. Prepare a vinaigrette and toss the salad.
  • Serve the penne with anchovy along with the aragula salad.
