Ingredients

  • 10 mL (2 tsp.) Compliments Olive oil
  • 1 onion, finely chopped
  • 1.5 L (6 cups) sodium-reduced chicken broth
  • 500 mL (2 cups) celery, diced
  • 500 mL (2 cups) carrots, diced
  • 375 mL (1½ cups) cauliflower, cut into small florets
  • 1 can (796 mL/28 oz.) Compliments Diced Tomatoes
  • 1 can (540 mL/19 oz.) Compliments Tomato Juice
  • 1 can (540 mL/19 oz.) lentils, rinsed and drained
  • 10 mL (2 tsp.) powdered cumin
  • 125 mL (½ cup) fresh parsley, chopped
  • To taste, salt and pepper
  • To taste, fresh cilantro (garnish)
  • 175 mL (3/4 cup) plain yogurt
  • 30 mL (2 tbsp.) chopped fresh parsley
  • 30 mL (2 tbsp.) chopped fresh cilantro

Instructions

  • Heat oil in a large saucepan and brown onion for two minutes.
  • Add chicken broth, vegetables, tomatoes and tomato juice.
  • Cover and let simmer over medium-high heat for 25 minutes.
  • Add lentils, cumin and parsley and season to taste.
  • Continue cooking for 5 minutes.
  • Combine coriander yogurt ingredients.
  • When ready to serve, garnish soup with fresh coriander and a dash of coriander yogurt.
  • Accompany with a Compliments Rustic Loaf.
