Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast, cut into 4 pieces
  • 1 box UNCLE BEN’S® Long Grain & Wild Rice, Original Recipe
  • 4 ounces sliced black olives
  • 1 medium tomato, diced
  • 2 tablespoons lemon juice
  • 2-1/2 cups chicken or vegetable stock

Instructions

  • Sauté chicken pieces in olive oil over medium heat, browning well on all sides.
  • Add all remaining ingredients to the pan.
  • Bring to a boil, reduce heat to low, cover and simmer 20 minutes or until all liquid is absorbed and rice is tender.
