2 15-ounce cans of petite diced tomatoes (1 can plain, 1 can with green chiles)
2 6-ounce cans of tomato sauce
1 15-ounce can of dark kidney beans
1 15-ounce can of light kidney beans
1 packet low sodium taco seasoning
Shredded Mexican cheese, sour cream and tortilla chips, to taste and for garnish
YIELD 8 servings
Brown the ground turkey and sliced turkey kielbasa in a pan over medium heat.
Cut up the yellow squash and zucchini.
In a separate pot, place the yellow squash, green zucchini, petite diced tomatoes, tomato sauce, dark kidney beans, and light kidney beans. Add the packet of taco seasoning and the browned meat and mix together.
Let simmer for approximately 20 minutes, remove from heat then add spinach.
Cook rice according to package directions.
When rice is done, place a scoop of rice in each bowl, top with turkey chili, garnish with shredded cheese, sour cream and a few tortilla chips.
