Individual Rhubarb And Strawberry Pies To Impress Your Guests

Ingredients

  • 300 g. Rhubarb, trimmed, washed and cut into 2.5cm pieces
  • 250 g. pack of strawberries,hulled and chopped
  • 2 tbsp. sugar, plus extra to dust
  • flour to dust
  • 340 g. shortcrust pastry, homemade or shop bought
  • 1 egg, to glaze

Instructions

  • In a small saucepan, add rhubarb and strawberries and sprinkle with sugar. Simmer for 5-10 mins. Put to one side andleave to cool. Now preheat oven to gas mark 6/200°C(190°C in a fan oven).
  • On a floured board, roll pastry out to 3mm/1⁄8in thick. For ease, halve pastry and roll into two batches. Cut 3 rounds in each batch, using an 11.5cm/4in round cutter, then mak ea cut in the middle of each one, so you can fold and press them into a 6-hole deep muffin tin. Spoon mixture in, addinga little juice. Pack down so each pie is full.
  • Roll pastry out again on floured board and cut out 6 tops using a 9cm/3in cutter. Wet edges of tops and pies then pinch on tops, to secure. Brush with egg wash, poke an air hole, sprinkle with sugar and cook for 20 mins, or till pastry is golden. If tops brown too quickly, cover with tin foil. Use a knife to loosen and remove,if serving hot.
