Ingredients

  • 8 oz. boneless skinless chicken breast, cut into bite-sized pieces
  • 2 tbsp. avocado oil, divided*
  • 2 tsp. fresh ginger, minced
  • 3 garlic cloves, minced
  • 2 tbsp. reduced sodium soy sauce, divided*
  • 1 tbsp. honey
  • 2 cups stir-fry vegetables
  • 1/4 cup dry basmati rice, cooking according to package instructions*

Instructions

  • Heat avocado oil in a skillet or wok over medium-high heat.
  • Add diced chicken and cook, stirring a couple times, until browned in places (about 5 minutes).
  • Add minced garlic and ginger, stir-frying a couple minutes until fragrant.
  • Reduce heat to medium and add honey and soy sauce. Cook and stir until a thick glaze has formed over the chicken. Set chicken aside.
  • Rinse skillet or wok and heat another tablespoon of avocado oil over medium-high heat.
  • Add stir-fry vegetables and soy sauce; stir-fry until tender.
  • Add chicken back with vegetables and stir to combine.
  • Serve over cooked basmati rice (or cauliflower rice, brown rice, or other rice). Enjoy hot!
  • Leftovers will keep in the fridge in an airtight container up to one week.
