Ingredients

  • 1 chicken carcass
  • 2.5 L (10 cups) water
  • 2 large onions, unpeeled
  • 2 large carrots, unpeeled
  • 6 stalks celery, leaves remaining on 2 stalks
  • 1 head garlic, cut in half
  • 3 bay leaves
  • 15 mL (1 tbsp.) whole peppercorns
  • ½ bunch fresh parsley
  • 2 sprigs rosemary
  • 5 sprigs fresh thyme
  • 1 cheesecloth

Instructions

  • Place the chicken bones in a large stock pot and cover with water.
  • Bring to a boil.
  • Meanwhile, coarsely dice the onions, carrots, and celery.
  • When the broth is boiling, add the vegetables and seasonings.
  • Use a ladle to skim off any impurities that rise to the surface.
  • Simmer for 4 hours, continuing to skim impurities from the surface throughout cooking.
  • Strain the stock through a mesh strainer lined with damp cheesecloth.
