  • 1 each green and red pepper, coarsely chopped
  • 1 onion, coarsely chopped
  • 1/3 cup Philadelphia Light Cream Cheese Product
  • 1 Tbsp. Thai green curry paste
  • 1/2 cup lite coconut milk
  • 1/2 cup water
  • 1 cup snow peas
  • 2-2/3 cups hot cooked long-grain brown rice
  • 1/4 cup chopped fresh cilantro

Instructions

  • Cook and stir meat in large skillet sprayed with cooking spray on medium-high heat 4 min. or until evenly browned.
  • Add peppers and onions; cook 4 to 6 min. or until crisp-tender, stirring constantly.
  • Add next 4 ingredients; cook 3 min. or until cream cheese product is melted, stirring constantly.
  • Bring just to boil; simmer on medium-low heat 8 min. or until meat is done, stirring frequently.
  • Add snow peas; cook and stir 2 min.
  • Serve over rice; top with cilantro.
