Ingredients

  • 180 ml (3/4 cup) 15% M.F. country-style cream
  • 180 ml (3/4 cup) buttermilk
  • 2 limes, juice
  • 125 ml (1/2 cup) fresh coriander
  • 1 avocado, cut
  • 3 green onions, thinly
  • 1 green pepper
  • 2 English cucumbers
  • 2 ml (1/2 teaspoon) pepper
  • 1 ripe tomato, seeded
  • 5 ml (1 teaspoon) salt
  • to garnish, coriander leaves

Instructions

  • In a bowl, gently combine cucumber, green pepper, green onions, avo-cado, minced coriander, lime juice, buttermilk, cream, salt, and pepper.
  • Transfer half the vegetable mixture to a blender.
  • Purée for about 30 seconds or until mixture reaches an even consistency.
  • Return purée to remaining vegetable mixture and gently combine.
  • Adjust seasoning to taste.
  • Cover and refrigerate for 2 hours.
  • Pour mixture into soup bowls.
  • Garnish with tomato cubes and coriander leaves.
