Ingredients

  • 1 tbsp (15 mL) extra virgin olive oil
  • 1 large onion, diced
  • 1 celery stalk, chopped
  • 1 medium green bell pepper, chopped
  • 2 medium thin-skinned potatoes, diced
  • 2 cans (213g each) Clover Leaf Low Sodium Sockeye Salmon, drained and flaked (remove skin & bones as desired)
  • 1 tsp (4 mL) dry thyme leaves
  • 1 tsp (4 mL) dry marjoram leaves
  • 1 tbsp (15 mL) tomato paste
  • ¼ tsp (1 mL) paprika
  • 1/8 tsp (0.5 mL) ground white pepper
  • ¼ tsp (1 mL) salt
  • 1 can (400-420g) low sodium chicken broth
  • 2 cups (500 mL) whole milk

Instructions

  • Heat oil in large pan.
  • Add onion, celery, bell pepper and potatoes.
  • Lightly sautee about 5 minutes.
  • Add salmon, thyme, marjoram, tomato paste, paprika, white pepper, salt, chicken broth and milk.
  • Stir mixture and bring to a gentle boil, simmer for about 15 minutes or until potatoes are tender.
  • Serve with crackers.
