Cranberry, Pear, and Ginger Chutney

Ingredients

  • 750 mL (3 cups) fresh or frozen cranberries
  • 1-2 firm Bosc or Bartlett’s pears,* peeled and diced to ½ cm (¼ inch)
  • 250 mL (1 cup) water
  • 125 mL (½ cup) maple syrup
  • 15-30 mL (1-2 tbsp.) chopped fresh ginger
  • 1 orange rind removed in a single 2.5 x 7.5 cm (1 x 3 inch) strip with a vegetable peeler
  • 2 cloves (optional)

Instructions

  • Place all ingredients in a 4 L (16 cup) saucepan.
  • Bring mix to a boil over high heat, then reduce heat and let simmer uncovered for 15 minutes, stirring regularly.
  • If the chutney seems too liquid, let it cook a bit longer.
