Ingredients

  • 160 ml (2/3 cup) 15% M.F. cooking cream
  • 30 ml (2 tbsp.) sugar
  • 3 egg yolks
  • 30 ml (2 tbsp.) honey
  • 1 lime
  • 45 ml (3 tbsp.) finely chopped fresh ginger
  • 3 Bosc pears
  • 160 ml (2/3 cup) milk
  • 120 g (4 oz.) dark chocolate
  • 4 to 6 fresh raspberries

Instructions

  • Place pears, ginger, lime juice and honey in a small saucepan.
  • Cook over medium heat for about 12 minutes until pears become soft.
  • Using a potato masher or fork, coarsely purée pears.
  • Divide evenly among small individual containers (jars, ramekins, verrines).
  • Refrigerate.
  • Using a whisk, combine egg yolks with sugar until mixture becomes pale.
  • Set aside.
  • Heat cream and milk in a saucepan over medium heat.
  • When mixture starts to boil, gradually incorporate egg mixture, whipping vigorously.
  • Continue cooking, gradually adding chocolate and stirring continuously until thoroughly melted.
  • Pour on top of pear mixture in containers.
  • Refrigerate for at least 2 hours before serving.
  • Garnish each with chocolate shavings.
