Ingredients

Dressing :

  • 6 tbsp (90 mL) Crisco® Vegetable Oil
  • 3 tbsp (45 mL) white wine vinegar
  • 1 1/2 tsp (7 mL) fresh lemon juice
  • 1 1/2 tsp (7 mL) Dijon-style mustard
  • salt and freshly ground black pepper, to taste

Salad :

  • 3 cups (750 mL) diced cooked chicken
  • 1/2 cup (125 mL) orzo pasta, cooked according to package directions
  • 1 cup (250 mL) cherry tomatoes, halved
  • 4 green onions, thinly sliced
  • 1 6 oz (170 g) jar of marinated artichoke hearts, core removed, sliced into thick slices

Instructions

  • Whisk together all dressing ingredients; season with salt and pepper.
  • Combine the chicken, cooked orzo, tomatoes, green onions and artichoke hearts; toss with dressing to combine.
  • Season salad with salt and pepper to taste; serve.
