Ingredients

  • 90 g Black pudding
  • 0.5 apple
  • 1 potato
  • 40 g Batavia lettuce
  • 1 strand Parsley
  • 10 mL (2 teaspoon) Yeast
  • 10 mL (2 teaspoon) balsamic vinegar
  • 10 g Butter
  • 30 mL (2 tablespoon) Olive oil
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions

  • Mix 1 teaspoon of brewer’s yeast, 1 teaspoon of vinegar, 1 tablespoon of olive oil and a little salt.
  • Season the green lettuce with this vinaigrette.
  • Peel the potatoes and cook for 15 minutes in salted water.
  • Peel the apple, cut in 4, remove the core and cut each quarter in two.
  • Melt 1 knob of butter in a frying pan, put the apple in and cook over low heat for 10 minutes turning over from time to time.
  • Cook the black pudding in another frying pan in a little vegetable oil.
  • Start cooking over high heat to sear, then lower the heat.
  • Cook for 10 minutes, turning it over regularly.
  • Crush the potato, add salt, pepper and mix with 1 knob of butter and the chopped parsley.
  • Place the black pudding on a plate with the apple quarters.
  • Serve the black pudding with apples along with crushed potatoes and green salad.
