Avocado Salad Wraps

Ingredients

Dressing

  • 1 avocado, ripe
  • 1/4 cup (50 mL) Crisco® Canola or Vegetable Oil
  • 1/4 cup (50 mL) lime juice
  • 2 cloves garlic, minced
  • 1/2 tsp (2 mL) salt

Salad Filling

  • 4 cups (1 L) salad greens
  • 1/2 cup (125 mL) goat cheese or feta, crumbled
  • 1 small red onion, sliced
  • 4 large whole wheat tortillas (approx 10”/23 cm)
  • 8 (250 g) roast turkey slices, or your favourite deli meat (optional)
  • 1 avocado, ripe, sliced in 8

4 large tortilla wrap

Instructions

  • Dressing: Place ingredients in food processor. Process until smooth. Reserve.
  • Filling: Combine salad greens, goat cheese and red onion. Toss with reserved dressing.
  • Place tortillas on flat surface. If using roast turkey, place 2 slices onto tortillas.
  • Divide salad mixture between 4 tortillas and place on top of turkey. Place 2 slices of avocado on top of each one.
  • Roll up tortillas, slice in half and serve.
  • Omit deli meat for a vegetarian wrap.
  • Grill wrap before serving.
