Applesauce Raisin Loaf

Ingredients

  • 250 ml or 1 cup All-Bran Buds* cereal
  • 250 ml or 1 cup all-purpose flour
  • 175 ml or 3/4 cup whole wheat flour
  • 125 ml or 1/2 cup granulated sugar
  • 10 ml or 2 tsp baking powder
  • 2 ml or 1/2 tsp baking soda
  • 5 ml or 1 tsp ground cinnamon
  • 1 ml or 1/4 tsp salt
  • 1 ml or 1/4 tsp ground nutmeg
  • 250 ml or 1 cup raisins
  • 375 ml or 1 1/2 cups sweetened applesauce
  • 125 ml or 1/2 cup water
  • 1 egg, lightly beaten
  • 75 ml or 1/3 cup vegetable oil

Instructions

  • Combine flours, sugar, baking powder, cinnamon, soda, salt, nutmeg and raisins: set aside.
  • In large mixing bowl, combine cereal with applesauce and water.
  • Let stand 5 minutes.
  • Add egg and oil.
  • Beat well.
  • Add flour mixture, stirring just until combined.
  • Spread evenly in greased 2 L (9 x 5") loaf pan.
  • Bake at 180°C (350°F) about 55 minutes or until wooden pick inserted near centre comes out clean.
  • Cool 10 minutes on wire rack before removing from pan.
  • Cool completely before slicing.
