Ingredients

  • 1 Zucchini
  • 2 Tomatoes
  • 80 g aragula lettuce
  • 30 g Feta cheese
  • 1 garlic clove
  • 4 pitted black olive
  • 6 mint leaf
  • 30 mL (2 tablespoon) Vinaigrette
  • 30 mL (2 tablespoon) Olive oil
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions

  • Cut the zucchini in half lengthwise.
  • With a spoon, scoop out the seeds of the 2 zucchini halves.
  • Place the zucchini halves in a steamer basket and cook for 10 minutes.
  • Then place them in a baking dish.
  • Peel and dice the tomatoes removing the seeds and juice.
  • Finely chop the garlic and olives.
  • Heat a little oil in a frying pan, sweat the garlic, tomatoes and olives for 5 minutes while stirring. Blend well.
  • Fill the hollow zucchinis with the mixture of the frying pan.
  • Top with the crumbled feta mixed with snipped mint. Season with pepper.
  • Put in the oven preheated to 400 °F.
  • Bake for 15 minutes.
  • Wash and spin the aragula salad.
  • Prepare the vinaigrette in a salad bowl and add the aragula.
  • Serve the cheese-stuffed zucchinis garnished with the aragula salad.
