Ingredients

  • 175 ml or 3/4 cup All-Bran Flakes* cereal
  • 10 ml or 2 tsp butter or margarine
  • 2 ml or 1/2 tsp grated lemon rind
  • 4 medium zucchini (each about 18 cm/7 inches long), sliced 1 cm (1/4 inch) thick
  • 30 ml or 2 tbsp butter or margarine
  • 1 ml or 1/4 tsp salt
  • 0.5 ml or 1/8 tsp pepper
  • 15 ml or 1 tbsp lemon juice
  • 3 medium tomatoes, cut into wedges

Instructions

  • Crush cereal to coarse crumbs.
  • In small skillet or saucepan, melt the 10 ml (2 tsp) butter.
  • Stir in cereal crumbs.
  • Cook over low heat, stirring constantly, until cereal is lightly browned.
  • Remove from heat.
  • Stir in lemon rind.
  • Set aside.
  • In large skillet, melt butter over medium heat.
  • Add zucchini slices; cook until almost tender, stirring frequently.
  • Sprinkle with salt and pepper.
  • Stir in lemon juice and tomato wedges.
  • Cook until tomatoes are heated through.
  • Spoon mixture into serving bowl.
  • Sprinkle top with cereal mixture.
