Ingredients

  • 625 ml or 2 1/2 cups chicken or vegetable broth
  • 150 ml or 2/3 cup brown rice (uncooked)
  • 50 ml or 1/4 cup chopped onion
  • 50 ml or 1/4 cup chopped carrot
  • 50 ml or 1/4 cup chopped celery
  • 2 ml or 1/2 tsp dried oregano or dill
  • 500 ml or 2 cups All-Bran Flakes* cereal
  • 1 can (250 ml/8 oz) tomato sauce
  • 30 ml or 2 tbsp finely chopped fresh parsley

Instructions

  • In large saucepan, bring chicken broth to boil over medium heat.
  • Stir in brown rice.
  • Reduce heat, cover and simmer for 25 minutes.
  • Stir in onion, carrot, celery and oregano.
  • Simmer for 25 minutes more or until vegetables are tender and broth is absorbed.
  • Stir in cereal and tomato sauce.
  • Cover and cook for 5 minutes or until heated through.
  • Remove from heat; stir in parsley.
