Ingredients

  • 3 green onions
  • 125 mL (1/2 cup) fresh mint leaves
  • 24 medium shrimps
  • 12 rice sheets
  • 30 mL (2 tbsp.) water
  • 45 mL (3 tbsp.) plum jam
  • 5 mL (1 tsp.) soy sauce
  • 5 mL (1 tsp.) fish sauce
  • 1/2 Honeydew or Galia melon
  • 1/2 Charentais or Crenshaw melon
  • 250 mL (1 cup) bean sprouts

Instructions

  • Combine all sauce ingredients and set aside.
  • Wash bean sprouts under cold water.
  • Drain and set aside in a bowl.
  • In the meantime, finely julienne melon and green onions and place in bowls.
  • Also place mint leaves and shrimp in bowls.
  • Soak a rice sheet in boiling water for about 10 seconds and spread on a damp cloth.
  • Place two shrimp, a few melon and green onion strips, two to three mint leaves and some bean sprouts in the middle.
  • Fold sheet in half over stuffing, fold in sides and roll firmly but gently.
  • Repeat for remaining rolls.
  • Serve rolls cut in half with a small ramekin of sauce and garnish plates with remaining melon strips.
