Strawberry Cream Cheese Muffins

Ingredients

  • 300 ml or 1 1/4 cups all-purpose flour
  • 125 ml or 1/2 cup granulated sugar
  • 15 ml or 1 tbsp baking powder
  • 1 ml or 1/4 tsp salt
  • 1 ml or 1/4 tsp ground cinnamon
  • 125 g or 4 oz cream cheese, softened
  • 500 ml or 2 cups All-Bran Original* cereal
  • 1 pkg (284 ml/10 oz) frozen, sweetened, sliced strawberries, thawed (not drained)
  • 1egg (or 2 egg whites)
  • 45 ml or 3 tbsp vegetable oil
  • 50 ml or 1/4 cup strawberry jam

Instructions

  • In medium bowl, mix together flour, sugar, baking powder, salt and cinnamon.
  • Cut cream cheese into 48 small pieces.
  • Add to flour mixture, tossing to coat.
  • Set aside.
  • In large mixing bowl, mix together cereal and thawed strawberries.
  • Let stand for 5 minutes or until cereal is softened.
  • Stir in egg and oil; beat well.
  • Add flour mixture, stirring only until combined.
  • Spoon batter into 12 large muffin tins, coated with non-stick cooking spray or lined with muffin papers.
  • Dot tops of batter with jam (about 5 mL/1 tsp on each) and swirl through lightly with knife.
  • Bake at 200°C (400°F) for 20 to 22 minutes or until browned and firm to the touch.
  • Serve warm.
  • May be frozen.
