Ingredients

  • 250 mL (1 cup) mayonnaise
  • 60 mL (4 tbsp.) sriracha sauce
  • 8 slices bacon
  • 30 mL (2 tbsp.) olive oil
  • 500 g 1 ¼ lb. (18 oz.) boneless pork loin roast (1 piece)
  • 12 slices, sliced white bread
  • 8 leaves romaine lettuce
  • 2 avocados, sliced
  • 2 tomatoes, sliced
  • To taste, salt and pepper

Instructions

  • In a bowl, mix mayonnaise and half of the sriracha.
  • Set aside.
  • Brush meat with remaining sriracha.
  • Season with salt and pepper.
  • Let marinate for 1 hour at room temperature.
  • In a non-stick skillet, cook bacon slices for 5 minutes or until crispy.
  • Heat oil. Cook pork roast for 3–4 minutes on each side.
  • Set aside on a plate.
  • Slice very thinly, then set aside.
  • Toast bread.
  • Spread toast with sriracha mayonnaise.
  • Garnish with lettuce and spicy pork slices.
  • Add second slice of toasted bread.
  • Garnish with avocado, tomatoes and bacon.
  • Close club with the third slice of bread.
  • Cut and enjoy.
