Ingredients

  • 1 carton (900 mL) CAMPBELL’S® Ready To Use Pho Broth
  • 10 oz (283 g) Soba Noodles
  • 2 cups (500 mL) long beans or green beans
  • 1 medium carrot, julienned
  • 2 green onion, thinly sliced
  • 2 tbsp (30 mL) roasted Black sesame seeds
  • Salt and pepper to taste

  • DRESSING:

  • 1 tbsp (15 mL) lime juice
  • 1 tbsp (15 mL) soy sauce
  • 2 tsp (10 mL) sugar
  • 2 tsp (10 mL) grated ginger root
  • 2 tsp (10 mL) sesame oil
  • 2 tsp (10 mL) sambal oelek chili sauce (or sriracha)

Instructions

  • In a medium saucepan, bring broth to a boil. Add noodles and cook for 2 minutes. Remove from heat. Add beans, cover and let sit for one minute or until noodles are al dente and the beans are tender crisp.
  • In the bottom of a medium bowl, whisk together the vinaigrette: lime juice, soy sauce, sugar, ginger, sesame oil and sambal oelek.
  • Add the soba noodles and green beans to the bowl with the vinaigrette along with the carrot, green onions and roasted black sesame seeds. Toss well to coat and season with salt and pepper to taste before serving.
