Slow Cooker Sticky Garlic Sesame Meatballs

Ingredients

For the Meatballs *SEE RECIPE NOTES FOR EASY MEATBALL ALTERNATIVE

  • 4 pounds ground beef
  • 3 large eggs
  • 1 large white onions, finely chopped
  • 7 cloves garlic, minced
  • 2 1/2 teaspoons soy sauce
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon ground black pepper
  • 1 1/2 teaspoons salt
  • 2 teaspoons ground yellow mustard powder
  • 1 teaspoon paprika
  • 3/4 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 3/4 teaspoon red pepper flakes ( less for less spicy )
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup plain breadcrumbs

Garlic Sesame Sauce

  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1/2 cup soy sauce ( may use low-sodium if desired )
  • 1/2 cup + 2 tablespoons honey
  • 4 tablespoons ketchup
  • 1 teaspoon sesame oil
  • 2 1/2 teaspoons rice vinegar
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes
  • 5 garlic cloves, minced
  • 1/4 teaspoon black pepper
  • 2 1/2 teaspoons granulated sugar
  • 1 bunch green onions, chopped
  • 1 tablespoon sesame seeds
  • 8-10 servings cooked rice ( serve with )

Instructions

  • Prepare a baking sheet with parchment paper. Preheat oven to 400 degrees F.
  • Chop onions and garlic. I used a food processor to chop them finely.
  • In a large bowl, whisk eggs. Add garlic and onions. Add meatball seasoning ( not sauce ingredients ).
  • Stir in bread crumbs and parmesan cheese. Whisk to combine egg/seasoning mixture well.
  • Add in ground beef. Using your hands, work the ground beef into the wet mixture, coating everything well.
  • Form even size meatballs with a cookie scoop then place on prepared baking sheet close together, but not touching each other.
  • Bake meatballs for 35 minutes. then transfer to cooling rack while baking the rest.
  • To make the sauce, whisk together 1 tablespoon cornstarch and 1 tablespoon cold water. Add sauce ingredients; soy sauce, honey, ketchup, sesame oil, rice vinegar, ginger red pepper flakes, black pepper, and sugar then whisk well to combine.
  • Add meatballs to slow cooker. Pour sauce over meatballs.
  • Cover and cook on low for about 1-2 hours.
  • Set slow cooker to high for about an hour. This will thicken the sauce.
  • Serve meatballs with chopped green onions, sesame seeds and with cooked rice.
