Ingredients

  • 125 ml or 1/2 cup All-Bran Buds* cereal
  • 125 ml or 1/2 cup Italian bread crumbs
  • 500 g or 1 lbground chicken or turkey
  • 1egg
  • 125 ml or 1/2 cupcooked, drained spinach
  • 125 ml or 1/2 cupdiced onion
  • 4 clovesgarlic, minced
  • 125 ml or 1/2 cup grated Parmesan cheese
  • 5 ml or 1 tsp each, salt and pepper
  • 5 ml or 1 tsp poultry seasoning
  • 30 ml or 2 tbsp olive oil

Instructions

  • Combine cereal and bread crumbs in a large bowl.
  • Add chicken, egg, spinach, onion, garlic, cheese, salt, pepper and poultry seasoning and mix gently just to combine.
  • Form mixture into 5 cm (1½-inch) balls and place on a parchment-lined rimmed baking sheet.
  • Brush meatballs with oil.
  • Bake at 180°C (350°F) for 20 minutes or until chicken is cooked through.
  • Variation : Try this recipe with lean ground, turkey, pork or beef.
