Ingredients

  • To taste, salt and pepper
  • 30 mL (2 tablespoons) fresh parsley, chopped
  • 24 shrimps, shelled and deveined
  • 125 mL (1/2 cup) white wine
  • 10 mL (2 teaspoons) dried thyme, crushed
  • 1 tomato, diced
  • 1 carrot, sliced into rounds
  • 1 green bell pepper, chopped
  • 30 mL (2 tablespoons) olive oil
  • 1 garlic clove,
  • 1 onion,

Instructions

  • Brown the onion and garlic in the olive oil for 2 to 3 minutes.
  • Add the green pepper, carrot, and tomato, and sauté together for 3 to 4minutes.
  • Incorporate the thyme, white wine, and shrimp.
  • Cook for 3 minutes.
  • Remove the shrimp and reduce the sauce.
  • Return the shrimp to the pan.
  • Sprinkle with parsley and serve with rice and black beans.
