Ingredients

  • 15 mL (1 tablespoon) capers (optional)
  • 10 mL (2 teaspoons) olive oil
  • 125 mL (1/2 cup) freshly grated Parmesan cheese
  • 225 g (1/2 lb.) frozen cooked shrimp, thawed and drained
  • 5 mL (1 teaspoon) dried oregano
  • 10 mL (2 teaspoons) balsamic vinegar
  • 2 cloves garlic, finely sliced
  • 1 onion
  • 100 g (2 balls) drained bocconcini or mozzarella cheese, sliced
  • 30 mL (2 tablespoons) tomato paste
  • 2 (60 g each) store-bought refrigerated thin pizza crusts
  • 150 g (1/2 package) frozen whole asparagus

Instructions

  • Preheat oven to 230?C (450F).
  • Cook asparagus following instructions on package.
  • Drain and reserve.
  • Place pizza crusts on a greased baking sheet.
  • Brush with tomato paste and top with cheese, onion and garlic slices.
  • Sprinkle with balsamic vinegar and oregano.
  • Arrange shrimp, asparagus and capers evenly on pizzas.
  • Drizzle with olive oil and sprinkle with grated Parmesan.
  • Bake on the lowest oven rack for 15 minutes or until the crust is golden and the cheese is melted.
  • Serve with a green salad.
