Ingredients

  • 1-1/4 lb. (565 g) red potatoes (about 4)
  • 1 Tbsp. oil
  • 1 yellow onion , chopped
  • 1 green pepper , chopped
  • 6 slices peameal bacon , chopped
  • 1 can (14 fl oz/398 mL) Heinz Maple Style Beans with Pure Quebec Maple Syrup
  • 6 eggs
  • 2 green onion s, chopped

Instructions

  • 1. Prick potatoes in several places with fork or sharp knife. Microwave on HIGH 6 min. or until tender, turning and rearranging potatoes after 3 min. Cool 5 min. Cut potatoes into 3/4-inch cubes.
  • 2. Heat oil in large nonstick skillet on medium heat. Add yellow onions, peppers and bacon; cook 5 min., stirring occasionally. Add potatoes; cook 8 to 10 min. or until lightly browned, stirring occasionally. Stir in beans; cook 3 min., stirring frequently.
  • 3. Use back of spoon to make 6 indentations in top of bean mixture; slip cracked egg into each indentation. Cover; cook 10 to 15 min. or until egg whites are set and yolks are cooked to desired doneness. Sprinkle with green onions.
