Cut top of cob loaf and remove soft bread centre. Cut up or break up the soft bread into chunks, cover and set aside.
Place sour cream and cream cheese in a large bowl, mix until smooth and combined then stir in seafood, onion and sweet chilli sauce. Spoon mixture into cob, cover with top and wrap in foil.
Bake at 150C preheated for 1¼-1½ hours, unwrap and glace top of cob with a little butter or milk. Put back in oven set to 190C for 5 more minutes or until top is crisp.
Serve with the plain or toasted chunks of bread to dip.
Outside of loaf can be pulled apart and used to dip into filling also.
