Ingredients

  • 1 cob loaf large
  • 300 g sour cream
  • 250 g spreadable cream cheese
  • 600 g prawns roughly chopped
  • 1 onion finely chopped
  • 1/2 cup sweet chilli sauce *to taste
  • 1/4 cup milk to coat

Instructions

  • Cut top of cob loaf and remove soft bread centre. Cut up or break up the soft bread into chunks, cover and set aside.
  • Place sour cream and cream cheese in a large bowl, mix until smooth and combined then stir in seafood, onion and sweet chilli sauce. Spoon mixture into cob, cover with top and wrap in foil.
  • Bake at 150C preheated for 1¼-1½ hours, unwrap and glace top of cob with a little butter or milk. Put back in oven set to 190C for 5 more minutes or until top is crisp.
  • Serve with the plain or toasted chunks of bread to dip.
  • Outside of loaf can be pulled apart and used to dip into filling also.
